Egg Drop Soup

Yes, it was one cold evening and I wanted to drink something hot . So I decided to make a soup.

It was long hard working day with my toddler. I had no energy to cut the veggies and make a veg soup. This quick recipe of Egg drop soup sparked my thoughts. I wanted to share this quick and easy recipe something which is soothing for the cold weather.

When ever you are feeling sick with cold & flu , this one is a life saver . below are the ingredients and methods to prepare.


INGREDIENTS

  • Onion - 1 small size (finely chopped)

  • Tomato(optional)- 1/2 ( chopped into cubes)

  • Spring onions

  • (Green onions) - a handfull

  • Ginger & Garlic -

  • Egg - 1

  • Vegetable broth - 3 cups

  • or you can also use water if you don't have vegetable broth.

  • Corn starch

  • (or corn flour) - 1.5 TSP

  • Black pepper - to taste

  • Salt - to taste

  • oil - 1 TSP

PREPARATION


  • Take a sauce pan and heat the pan . Add one 1 Tsp oil.

  • Add chopped onion and saute it. Add a little spring (green) onions.

  • Then add ginger and garlic paste . Saute it.

  • Add tomato and stir it lightly . Note tomato is optional as it is mentioned up.

  • Add 3 cups of vegetable broth (or water).

  • Let it cook for 2 mins in medium heat.

  • Now take a small bowl and drop one egg.

  • Beat it or Whisk it well.

  • Now slowly add the egg into the pan while stirring the soup.

  • This allows the egg to turn into crumpled or kind of scrambled texture .

  • Now add salt and pepper . give a stir.

  • Then add the chopped Spring (green) onions.

  • Server hot .

Enjoy having it hot during the cold weather.
